Ingredients

  • 1 oz non-alcoholic Gin
  • 2 oz lemon juice
  • 1 oz raspberry simple syrup
  • 1 oz ginger beer

Raspberry Simple Syrup

  • 2 cups of demerara sugar
  • 1 cup of water
  • 1 cup of fresh or frozen raspberries

How to make it

  1. Shake gin, lemon juice and raspberry syrup with ice, strain into glass, add ice cubes, top with ginger beer.
  2. Garnish with mint, lemon wheels or raspberries.
Raspberry Simple Syrup
  1. Stir sugar and water over low heat until sugar has dissolved.
  2. Add raspberries stirring until the berries form a pulp.
  3. Strain into a jar and refrigerate. Over time, the pectin will rise to the surface and can be skimmed off.
